Just because it's fun

So amidst all my running around trying to get ready to go to DC I decided to leave my parents and sister with a treat before my departure.

I actually agonized over what to make. Do I do something with chocolate? Should I just make the good old standard chocolate chip cookies? Cup Cakes? And then it came to me.

My own funfetti cupcakes! What better way to say goodbye with a little bit of fun.

I realize I make a lot of cake, especially recently but I would have to say that cake really is one of my favorite things and lucky for me cupcakes are super trendy
in the baking world.



I used this recipe again, I know its a bit of a rerun but I am more partial to vanilla than chocolate cake. And I decided to make mini cup cakes, because they are cute but to be honest it was also because I only had mini cupcake liners.

But this time I made vanilla buttercream which I mixed with multicolored sprinkles to make it funfetti!

I got so into the baking process that I decided to use my new pastry bags and tips and play around with the icing.



I haven't mastered it quite yet but I will get there!

And then I tried some new things on the cupcakes
* I ran out of sprinkles



But when all was said and done and the massive amount of dishes cleaned I know that my family will have some cup cakes when I leave whether they really wanted them or not.

I may or may not have had 3 or 4 cupcakes right after decorating.

Buttercream recipe:

1 stick of butter (room temp)

1/2 box of confectioners sugar

splash of milk

Mix the butter and sugar together and taste to see how sweet you want the icing to be

Then add milk slowly to get the desired icing

The right way to start your day

It's been so long since I have written! It's just all this running around trying to get myself ready to move in T-minus 3 days. Tick Tick Tick

Don't even get me started on how horrible craigslist has been.

But speaking of getting started I wanted to share how I like to start my day. I'm pretty picky breakfast eater. I can never figure out what I want in the morning. Yogurt is one of my favorite things and over the past year I have totally made over my yogurt intake.

I stopped eating the completely processed and saccharine filled yogurts like Yoplait and Dannon lite and fit. They may have few calories but they are filled with artificial sweeteners which have been linked to cancer. I switched to greek yogurt which is fairly low in calories and has a ton of protein and only has 9g of real sugars.

It's way better for you and keeps you filled for a long time.

But since Greek yogurt tends to be on the sour side much like plain yogurt. So I usually add fresh fruit and cereal but since it is winter fresh fruit is hard to come by. My solution? Frozen fruit pureed and then mixed with the yogurt. It tastes pretty darn delicious.
