Definitely having a case of the Mondays so time to look back at past travels again.

Thailand
I went on a trip with a group called International Student Volunteers. We volunteered for 2 weeks at Elephant Nature Park a reserve for abused Asian elephants and then traveled around the country for the 2 remaining weeks. This trip changed my life forever.

In other exciting news....I saw that I have my first reader that I do not personally know!!!

This is a big deal. I may even have a glass of wine to celebrate tonight!

Thanks for the support on the vegetarian front Mandy. I finally went grocery shopping at Trader Joe's today so I could actually make a meal. I made a red pepper, cheese, and black bean quesadilla on a multi grain tortilla with a side of my dad's very own barbaque sauce (his bbq sauce deserves it's own blog post its so good). This kinda of food will make it very easy to be a vegetarian!!
