It happens to be Caitlin, one of my college friends, favorite pairings and since I am staying at her apartment for the time being I decided to make her and her roommates a chocolate peanutbutter treat.
I give you chocolate peanut butter buttercream sandwich cookies.
Yup, I made these bad boys up. And I have to pat myself on the back. They were a mix between oreos and whoopie pies. Two soft chocolate cookies with sweet peanut butter cream nestle in between. Yum.
Butter+ sugar+peanut butter = bliss

I won't lie they are addictive. My boyfriend's roommates couldn't get enough when I gave some to them and Caitlin was a very happy girl.
Buttercream:
1 stick of room temp butter
About 1-2 cups confectioners sugar (depending how sweet you like it)
About 1 cup peanut butter
Mix butter and sugar until smooth. Then add peanut butter and mix until smooth.
If you want it to be sweeter or more peanut butter, go right ahead. No big deal, I'd actually be impressed.
Set aside.
The cookie recipe is my standard go to.
Chocolate Cookie:
2 sticks of butter
2 cups flour
2/3 cup cocoa powder (I used dark chocolate cocoa powder but it doesn't matter)
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
In a bowl mix sugars and butter until smooth. Then add one egg at a time and extract.
In another bowl mix flour, cocoa powder and baking soda.
Add the dry to the wet.
Bake at 350 for 8-10 minutes
