Cinco De Mayo

Happy Cinco De Mayo!



I love that we have pseudo holidays (meaning one not having to do with the US at all) as an excuse to have a good time. Even better when they incorporate food and drink like margaritas and chips and salsa.

I wanted to bring something into work to "celebrate" and all that came to mind was margaritas. Clearly bringing alcoholic beverages to work wouldn't be the best idea so I settled for something a little, and I stress a little, less intoxicating.

Margarita lime bars!



These are my variation on lemon bars. A little bit of lime zest, sugar, tequlia and salt, whipped up into something muy bueno.



I added a whopping 1/3 cup of tequlia to these little citrus bars. I knew I wanted it to be noticable but also knowing some would bake out.

Funny but true story, I don't like tequlia. I actually won't drink the stuff unless it's in a margarita and one could last me all night. Let's just say that tequlia and I had a falling out at one point and we just can't seem to reconcile. Enough said.




The apartment smelled heavenly while these baked. And just to send them a little over the border I made a lime glaze to slather over the top.

I had a hard time waiting to let them cool before cutting them.



I added a slice of lime and a pinch of salt to each one. And boy did that salt compliment the sweet and sour of these bars.

My grandmother Kitchen (yes her last name was Kitchen)would have loved these. She loved a good margarita and a sweet treat. I couldn't help but think my love for her came through in these bars.



Margarita Lime Bars:
1 Cup butter

1/2 Cup powdered sugar

2 Cups Flour

4 beaten eggs

1 1/2 Cups sugar

zest of 4 limes

1/3 Cup Tequila

1/4 Cup Flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup powdered sugar

1 Table spoon lime juice


Instructions:

Mix the butter and powdered sugar until combined and add the to cups of flour and mix.

Press the mixture into the bottom of a 13X9X2 pan and bake in a 350 degree oven for 20 minutes or until slightly golden.

Meanwhile beat the 4 eggs with the sugar and then add the tequlia. Next add the 1/4 cup flour, baking powder, and zest.

Pour the lime tequlia mixture onto the baked crust and bake again for 20-25 mintues.

Glaze:

Mix 1/2 cup powdered sugar and lime juice and a little zest until its a runny glaze. Top the warm bars with the glaze and sprinkle the top with salt.
