To be or not to be?

A vegetarian.

I have always been curious about being a vegetarian. Could I do it? Would I be good at it or someone that just eats pasta all the time?

Well after much thought I have decided that now is the time to try it. It is on my list of things to do in life and what better time then the present, right?

While I do see certain benefits of being a vegetarian such as the ecological effects I have to say I am not against eating animals in the least. In fact I do believe that humans are meant to eat meat. While some of the practices of slaughtering animals are definitely questionable, I still find myself in awe of a good cheeseburger.

I completely understand why people are vegetarians whether its for animal rights reasons, gastrointestinal issues, ecological effects, and just plain taste issues.

I would say at this point in my life I am a vegetarian 85% of each day. Meaning I tend to only eat animal protein one meal a day (usually). Therefore I am coming to a hasty conclusion that my transition to full on vegetarian will not be too difficult.

I plan on trying my best to eat vegetarian for the next month or two. I plan on trying some gluten free products, diary free products and maybe even some vegan products. However, I still plan on eating fish every once in awhile. Hopefully I can pick up some healthier eating habits and some new recipes.

Have no fear though, I will still bake! Aren't I lucky that ingredients in baked goods are generally vegetarian?

Yes yes yes!

And to start of my vegetarian month, I have a recipe!



Corn and black bean salad

1 bag of frozen corn thawed or 1 can of corn

1 can of black beans rinsed

1 chopped red bell pepper

1 diced avocado

1 medium tomato chopped

2 scallions diced

1/2 an onion chopped

1 hand full of cilantro lightly chopped

1 large garlic glove minced or chopped

Juice of 1 lime

1/4 cup of white wine vinegar (can use red wine vinegar if needed)

1 Tablespoon of honey (depending how sweet you want it)

1 teaspoon of cumin

salt and pepper to taste

Put all chopped vegetables and cilantro in a bowl

In another bowl mix vinegar, honey, lime juice, and garlic with a whisk

Add the vinegar mixture to the vegetable and toss. Then add cumin and mix again.

This tastes so fresh and has little to no fat. I like to eat it by itself in a bowl or as a side dish to a meal but I have a feeling it would taste fantastic on fish as a salsa.

Hurray for veggies!

  1. Yay! Yay! Yay!! Good luck on your vegetarian adventure!! I have some awesome vegetarian recipes and soups waiting in the wings for whenever you would like to use them! Not to mention this awesome peanut butter infused moffet that I am dying to get my hands on and will gladly pass your way. ALSOOOOO I know/can get my hands on about ohhhh a million and one gluten free recipes and products that are awesome!!! I particularly advise you to try and indulge in some gluten free brownies because they are to die for! Good luck!!

  3. I've been a vegetarian for over 20 years now. I never run out of ideas for meals. There is so much out there these days for peeps like us now so not to worry. Best of luck to you and know it's not impossible. I even live with a meat loving man from South America! Talk about clashing! haha
