Chocolate and Peanut Butter

Is there really a better pair?

It happens to be Caitlin, one of my college friends, favorite pairings and since I am staying at her apartment for the time being I decided to make her and her roommates a chocolate peanutbutter treat.

I give you chocolate peanut butter buttercream sandwich cookies.

Yup, I made these bad boys up. And I have to pat myself on the back. They were a mix between oreos and whoopie pies. Two soft chocolate cookies with sweet peanut butter cream nestle in between. Yum.


Butter+ sugar+peanut butter = bliss


Fill the cookies with buttercream with a pastry bag





I won't lie they are addictive. My boyfriend's roommates couldn't get enough when I gave some to them and Caitlin was a very happy girl.

Buttercream:

1 stick of room temp butter

About 1-2 cups confectioners sugar (depending how sweet you like it)

About 1 cup peanut butter

Mix butter and sugar until smooth. Then add peanut butter and mix until smooth.
If you want it to be sweeter or more peanut butter, go right ahead. No big deal, I'd actually be impressed.

Set aside.


The cookie recipe is my standard go to.

Chocolate Cookie:

2 sticks of butter

2 cups flour

2/3 cup cocoa powder (I used dark chocolate cocoa powder but it doesn't matter)

1 cup granulated sugar

1 cup brown sugar

2 eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

In a bowl mix sugars and butter until smooth. Then add one egg at a time and extract.

In another bowl mix flour, cocoa powder and baking soda.

Add the dry to the wet.

Bake at 350 for 8-10 minutes

Then fill the cookies with generous amounts of peanut butter buttercream and enjoy!

  2. I was reading over the recipe and I wanna cook it tonight asap bc they just sound too amazing not to have! Quick questions: how big do you form the cookies? and do you drop them on a cookie sheet or on parchement paper? hope you can answer them quickly so I can try these heavenly delicious treats for myself!

  3. I can I can! They are drop cookies and I made them pretty small. I tested the first batch to see how far they would spread. You could make them big though, I won't hold it against you haha. Either grease the sheet pan or use parchment, doesn't matter which although i vote parchment because theres less clean up!

  4. Wonderful thanks so much!! I'll do the same and test out my cookie size with the first batch and see how that goes...I'm also thinking the parchment paper is a great idea because goodness knows I hate to clean up a mess haha. Thanks so much!! I'll let you know how it goes :D
